Quick Arugula Piza, Fig Spread with Goat Cheese

Whenever we see the word "Quick" in a recipe title, we expect a shortcut.  Well, I'm lazy sometimes with cooking, but still want all the flavor and texture of a well-worked recipe. For me, a pizza is always an excuse for veggies, flavor, and a party of mouth textures. A little salty, a little crunchy, a little sharp bite and a touch of sweetness.

Pizza is also a great way to get rid of left-overs.  It's quick and and can be personalized.  So for hubby I added bacon (but then again, there are some who jokingly claim bacon is a "vegetarian-meat."  If I need a crispy-bite of salty goodness, I roast chickpeas with a chosen salty seasoning.

Shortcut - : Whole wheat naan bread for crust.

Ingredients:
thin layer of fig spread (or fig)marmelade
arugula seasoned with olive oil and salt
caramelized onions (tossed in with seasoned arugula)
goat cheese
seasoned roasted chickpeas
parmesan cheese

Pre heat oven / stone to 450 for crispy crust.
Lightly spread olive oil on naan. Top with a thin layer of fig spread (or fig)marmelade and goat cheese.

Immediately put seasoned arugula and onion mixture  and sprinkle with desired amount of parmesan cheese and (optional) chickpeas.

Yum.
