Green Smoothie

In a blender, combine 2 cups fresh almond milk, 1 tablespoon coconut oil, 1 tablespoon raw cacao powder, 1/2 cup fresh spinach leaves and 1/2 cup ice cubes. Blend until smooth and garnish with shredded coconut. Serves 2. Coconut oil is a healthy fat, according to Dr. Roizen, and spinach is packed with omega-3 fatty acids, so you get two doses of healthy fats in one delicious serving.

Greek Night



Spinach Pie and the Trimmings

If Ina Garten the Barefoot Contessa of the FoodNetwork can do it…so can I. At least that’s my thought!

Here’s the Spinach Pie Recipe.
The photo is from Greek Night at my house. I purchased the stuffed grape leaves from a local Mediterranean restaurant, but all else was from “chez moi.” It was fun making, but beware, Filo dough is a mess to work with and to eat. Had to pull out the broom.  Perhaps we should be working on table manners.

Menu
Spinach Pie
Hummus
Baba Ganoush
Grape Leaves (purchased)
Arugula and Feta Salad with Cranberries and Pears  Probably not Greek, but certainly delicious. 

I don't use hot sauce in hummus recipe (Ina does), but I do dress it with Saracha and olive oil; same with Baba Ganoush.

Oh and I topped it off with Baklava for the hubby!
